Recipe:Plantain Porridge

This is one dish that will definitely appeal to all your senses, it is healthy, yummy and easy to make, all you need to do is follow this process Ripe plantain Unripe plantain Palm oil Offal Cray fish Smoked dry fish Blended rodo (blended red pepper) Seasoning cubes Spinach or ugwu (chopped) Salt to taste Onion                                                            Procedure Wash your smoked fish, add it to boiling water with the seasoning cubes, pepper and onions and allow it to boil for about 5 minutes. Peel and add your unripe plantain and boil for about 5 minutes, then add the ripe plantain and boil for 10minutes. Then add your palm oil, crayfish and offal, stir well and let it cook for another 5-7minutes, stir in between to avoid burning. Mash the plantain considerably to make the porridge sauce thicker,but  add water if the sauce is getting too think,, then add your vegetable and allow it to simmer for some minutes, turn the flame off. Viola!

Caribbean Queen smoothie Ingredients 8 pieces of mango Coconut milk Chai seeds Extras: ground nutmeg, protein powder. Method Place your 8 frozen mango and ½ cup of coconut milk in the blender. Blend until smooth, and then add 1 tablespoon chai seeds and pulse just a few times to combine. Now you have a sweet, creamy and filling smoothie.
